Chile pepper that hails from the foothills of Puebla Mexico. In fact Serranias in Spanish means foothills. The flavor is bright and biting, with a delayed fuse. Serrano Peppers are 2-3″ long and a 1/2″ diameter. Crisp, fresh it is the hottest pepper commonly available. Unripe peppers are green and turn a kaleidoscope of colors from red, brown, orange and yellow as they ripen. Serranos are smaller and hotter than a jalapeno.
